Friday Nights with Chums & Food!

Friday night, to close to payday & no one including myself can go out. Trying to lay off drinking because summers coming & I need to look good in a bikini, also running session is in full string & heavy nights don’t help beat a PB. Buzzzzbuzzzzz ‘Wanna come over to my new pad for dinner & vino’ you got yourself a deal. Yes my chum Poppy offered me a warm meal, a girly chat & a lot of laughs.

Now before I share her recipes, I thought I’d share an opinion of great friends. As all Vegans are aware of, it’s hard to have a Vegan friend group & I love my friends, what they do is their choice. However the point I want to get across… Isn’t it lovely when your friends, who are meat-eaters, cook wonderfully yummy Vegan Food for you to enjoy. In my close group of friends there are three of us who are Vegans, two Vegetarians, one dairy-free & the others are all meat eaters. Poppy is girlfriend to one of the Vegans, however she is a meat-eater herself, but boy does she rustle up a yummy GFV dish! It is a wonderfully comforting feeling when you are on your way to your friends house for dinner & you don’t have to ask what you can & can’t have, you don’t have to explain why you’re vegan, you don’t have to worry that they may have gotten something wrong & you can just enjoy their company & food… Like a ‘normal’ person.

So thank you to my friends that have cooked for me over the years; Paul, Jen, Gee, Babs, Martha, Jeri, Matty & of course Poppy & her wonderful Creamy Mushroom & Tomato Spaghetti.

Creamy Mushroom & Tomato Spaghetti


Serves 2 People


1 Red Onion

3 Cloves of Garlic

1 Punnet of Mushrooms

1 Carton of Dairy Free Cream

1 Punnet of Cherry Tomatoes

Italian Mixed Herbs

Salt & Pepper (to taste)


Heat a pan, spray with fry light cooking spray. Chop Onion & Garlic & add to pan, then leave to simmer for 5 minutes. Chop mushrooms, and add to pan, if it starts to dry out add a little water.

Cook the Spaghetti according to the instructions.

Chop the tomatoes in half, in preparation.

Add the Dairy Free Cream, salt, pepper, 1 heaped teaspoon of Italian Mixed Herbs (again this is to taste), bring to the boil & keep stirring, as soon as the cream starts to boil turn the heat down & add the tomatoes & keep stirring
