Twenty Three – The Brilliance Of Flaxseed.

Today I  tried my latest Meridian purchase Almond ButterNot just spoonful’s of Almond Butter of course – that’s a little much. I had it on my Coconut Bread. This is the first time I’ve eaten my Coconut Bread for breakfast – the main reason I made it. The Coconut Bread, Almond Butter & Blackcurrant Jam combination was amazing. A taste sensation.Coconut Bread

You’ll be shocked to hear I didn’t have a banana yesterday. I think this might have been the first day I haven’t had a banana in like forever. I felt a little lost. I had withdrawal symptoms – so today I had two. Lunch was another bowl of ‘Star Lord Soup’. Followed by the second half of the Honeydew Melon that I didn’t eat yesterday & a Tesco Free From Caramel Crème. Very sweet & tasty.

Dinner was left over Gardeners Pie – even more delicious tonight then last night. I also had a second attempt at a Yorkshire pudding. This time it was much more successful. Thank the Google Gods. Tip for you – if you get a tablespoon of flaxseed & a couple of tablespoons of hot water, mix it, let it cool & add it to the mixture it creates the same affect that adding an egg does. As if. Flaxseed is pretty good for you too – it contains high levels of dietary fibre, lingams & omega-3 fatty acids. Also it can lower cholesterol levels – flax seed is great! Nice little lesson for you!

Today was a great day for food & it gave me inspiration for my next mini challenge. Tomorrow my housemate Gee & I are hosting dinner for some friends that live in out apartment block. I made it very Come Dine With Me Inspired & posted their invitation through their letter box. I am making starter & main. Gee is in charge of dessert. To make my life slightly easier I decided to make the starter tonight. Another Souper Hero. ‘Phoenix Surprise Soup’ – named after Jean Greys flame orange hair & it’s got a secret bit of spice – just like her mutant alter ego Phoenix. Okay so my soup ideas are getting pretty in depth – but I’m really enjoying it & it looks amazing! I am leaving the main until tomorrow so I’ll keep that one hidden until then.
